INGREDIENTS:
- 2 lbs Beef (ground or loin tips)
- 2 cups DRY Beans (pinto, kidney, black, navy all work fine)
- 4 cups of water
- 2 large Tomatoes, diced
- 1 large Onion, diced
- 2 large Anaheim peppers, chopped
- 1 head of Garlic, peeled & chopped
- 1 or 2 Habanero or Jalapeno peppers, chopped – if desired
- 4 tbsp Chili Powder
- 2 tbsp Crisco or Butter
- 1 tbsp Cumin
- Salt – to taste
INSTRUCTIONS:
Melt crisco or butter and brown burger or loin tips. It is not necessary to fully cook the beef at this point, just get it nice and caramelized. Add 4 cups of water and 2 cups of dried beans. Add Onion, Garlic, Peppers and Tomatoes. Cook on “High” pressure for 35 minutes on the “Meat/Stew” setting. Once the cook time has ended, allow ample time (15-20 min) for cooker to decompress before releasing pressure. Open, add dry ingredients and simmer for 10 to 15 minutes before serving. Total time – approx 2 hours.
